Photoshop is not the best program for desiging or putting together brochures.
You would be better looking at Illustrator or CorelDraw as these are vector based programs and handle large amounts of text better than PS.
I only used PS to clean up bitmap images and to created special effects

CorelDraw has some excellent templates for brochures and earlier versions aren't expensive.

Before I retired into the land of nod, I used CorelDraw (together with QuarkExpress), to assemble most of the work, which included brochures, menus, business cards, letterheads, invoice books etc for my clients

As for tutorials perhaps the best way is to look at what other designers are doing and get ideas from their work.

As for standards. Start with A4 or letter size (depending on country) as these are the most popular form of stock, then fold as you wish. Remembering that if they are to be printed commercialy folding adds an extra cost.

I hope these few ideas can get you started
