Is there any plug-in that has more control over bevel/emboss than the basic PS 7 effects. Or has CS 2 improved on the PS 7? Mainly for use with Text.

Ta!!!

What kind of control are you looking for? Anything in particular?
AlienSkin has some Bevel plugins included in their EyeCandy4000 and EyeCandy5 Impact.

The soft chisel effect creates too many 'edges' and the hard chisel is just a basic really. I Would like to be able to create a well defined curved rim to the text and be able to play about with the highlights a lot more.

I fear that what i actuall want is created in a 3D software, but i just don't have the time to learn new software at the minute.

Have you tried adjusting the soften while using the Chisel Soft seems to do just what you are looking for.
Anyway, good luck.

Yes, but not what i'm after. I guess i need a lesson in descriptive english as well!!!

I think i'll do a bit of googling, which to be fair, i have not yet done. I've had some suggestions of Alien skin, i'm hoping there'll be a demo.
