Normally when I open a new file I get a white window the size I asked for. Now, for no apparent reason, when I open a new file, I get a gray border at the left and right side of area where the image will be. This started for no apparent reason. How do I get rid of those borders?

There is no setting that would be responsible for that, it that's what happening. You might try deleting the preferences file, that sometimes fixes assorted PS problems.
