If that is what you are looking to do it's pretty simple.
For the one above, I used your sample pic.
-Open the image.
-Ctrl J to duplicate the background
-Type your text which will be on it's own layer
-In the layer pallet, move the copy of the background to above your text.
-In the layers pallet, hold down Alt and place your mouse over the line that seperates the copied background and your text. The Icon will change. Click.
-Now click on the eye to the background layer to hide it.
Should look similar to mine now.
