As a newbie to Photoshop, I have recently been painting in grayscale using brushes, and I now feel confident enough to move up to the next level; color painting. Is it better to paint with colored brushes as in traditional painting or is it better to paint in all grayscale and then add color?

The former my friend. Not to diminish Photoshops fine range of art tools, you might want to look into a demo (initially) of Corel's Painter series of software, if you are seriously into your natural media.
