What you want to do requires a knowledge of layers. If you don't understand layers, do some research as it's one of the most important concepts in PS.
The answer is both are possible and easily done. The first is to open both images and copy/paste, or simply drag one onto the other. Then you can erase (probably with a soft low opacity brush) the areas you don't want.
Multiple images are done the same way, only you create a new blank 8X10 canvas first. Then open the photos that you want on it, and copy/paste or drag each onto the new canvas.
Now for the technicalities...the images may need to be resized. The resolution should be the same for all of them and the new canvas should match that resolution.
