So, I'm making an file in photoshop that's 72 inches wide and 50 inches high. When I bring an image into the file that measures 20x18 inches, the image spans over half the width of the larger file, indicating to me that photoshop sees the image to be larger than what I had set it as in its original file. Any suggestions on how to remedy this or why this happens?

You need to also look at the PPI resolution (pixels per inch) of each file. They should be the same, obviously they are not.
