What I'm doing is.. I'm using 1 font to type the logo White Boi Productions
Then I use the lasso and delete the dots in the i's and also delete the t's.
Then I use a different font and type a dagger symbol and use that for the t's.
After that I type music notes and use those to dot the i's using a different font.
Next, I merge them into 1 layer, so I only have 2 layers: the background, and my logo.. And then I want to go to layer style to spice up my logo and give it cool colors etc.. but it doesn't work when I do my text that way for some reason.. whatever color I choose, it just colors on the side of the canvas lol its weird..
It worked fine in the first explanation, but won't work for my custom text

I think you may have left a few steps out in your description of what you did? You describe typing text, then lassoing to delete bits of the text, then typing more text. It sounds like you have rasterised the text at some point, or it wouldn't have let you delete just parts of it.
I don't want to read your tutorial in detail, but I noticed that step 4 said "rasterise the text".
Where I suspect you are going wrong is knowing the point at which you must rasterise. Here's the go. Text and custom shapes are "vectors". They resize very nicely, but and you can't use the normal pixel based editing things on them. Like deleting the dot on the "i". You have to "rasterise" them first.
But before you go ahead with step 4 (the "rasterise" step), check that you have collected all the vectors that you need (i.e text and vector shapes). Have all the text typed - it's OK to mix fonts and sizes. It's probably easier if you leave spaces in the text for where you are going to put your extra shapes. It's OK to have several layers. Don't worry at this stage about the bits that you are going to ERASE. You can't delete bits from it at this stage. So the dot on the "i" will still be there for now. Be patient!
Once you have all the text and shapes, step back and have a look. This is the stage where you should resize things and move them where you want them within the logo. Remember, you can't delete pieces of them at this stage.
If you're happy, rasterise them (for you, I'd suggest rasterise them one by one). NOW you can delete the dot on the i and stuff like that.
After this, merge the layers which make up the logo (NOT the background).
Then follow your tutorial from step 5. Go slowly and carefully and you should be OK.
