You can either use the colour replacement tool and just paint over the skin, or you can select the areas with one of the many selection tools and then create a new fill or adjustment layer and set it to either overlay or colour (whichever you find looks best) OR, you can select the areas you want and then adjust the colour balance, there are probably loads of other ways to do it, but these are the ways I'm familiar with
