yes i know what you mean... it`s tired to look at the whole list of fonts...
actually to save 1 step.... you just need to write what you want and then just using the character window you can change ...

here is a good tutorial, at least to get something somehow similar, you can apply it to a triangle and then duplicated and with some perspective skills you can get the figure right

usually this kind of icons are made in Illustrator first and then imported to PS to enhance the colors and finish touches... try in google for a tutorial about making jewels in PS ... that may help yo ...

mm it could be achieved by using hue/saturation but as first option i would try a layer with ADJUSTMENTS - GRADIENT MAP and some similar colors as the example
